Dates are the main ingredient of my Chocolate Cranberry Bites. You get their natural sugary flavour with a few added elements. Anytime that I can add chocolate to a recipe, I do it. So when I first discovered these delicious sweet treats, I knew a chocolate version was a must. Since I usually have dried cranberries at home to add to my Vanilla Cranberry Overnight Oatmeal, I threw some in. Nuts and chocolate are a match made in heaven, so naturally nuts followed.
This recipe makes the perfect snack when you need a burst of energy to keep you going in the afternoon or before a workout. I can testify that it is great for controlling sugar cravings as well.
To make these Chocolate Cranberry Bites, you literally just need to throw all the ingredients in your food processor, roll the mixture into balls and store them in the refrigerator. This recipe is highly adaptable and honestly, you can make a ton of different flavour combinations. I have made these with pumpkin seeds and almonds and on a separate occasion, a mix of shredded coconut, cocoa powder and nuts. You are only limited by your imagination. Try different kinds of nuts and dried fruits to personalize your own version of this recipe.
